Even More Martini Snacks

Here is some more food to go with your martini. I like to go with things that are simple to make (or that you can make in advance), easy to eat and either carbohydrate or protein based, especially on the savoury side of things.

 
Let’s start with some simple pretzels. 

  

And move on to some sliced chorizo, here rolled and skewered to make ‘dragonfly’ type bites.

  

Or to keep it simple, just slice the chorizo and serve it with on its own or as I did here, with miniature oatcakes.
  
Here is some sliced, cold roast pork, left over from the previous night’s dinner. Leftovers can make some surprisingly appropriate accompaniments for martinis sometimes, even though they might not always look very glamorous. 

  

Slightly more indulgent, here are some pork gyoza (dumplings) served with chives and a soy/vinegar/mirin dipping sauce. You can make them yourself, buy them ready-prepared and steam them or you could even have them delivered as takeaway food (the author might have done that on this occasion).

 
Pickled gherkins, Bombay mix and Japanese rice snacks combine three completely different cuisines. They don’t go together spectacularly well but it doesn’t matter too much once you’re on martini number two. It’s also useful if ou have several guests with different preferences.

  
This is a very simple tapas-inspired appetiser of cheese and tomatoe purée roasted in the oven for a few minutes.

  
Even something as simple as sausages go nicely. I prefer gamier types of sausage to go with juniper-strong gins.

  
Here are some Pringles. Everyone likes them so just get over yourself. I also like the argument that Pringles are the only crisp manufacturers that don’t sell you lots of air in their packaging. 

  
More crisps, here served with a classic martini containing a Rosemary garnish.

  
Nachos. Go well with dips and pair nicely with a coriander martini.

 

Here is some beetroot and salmon ceviche with leche de tigre, Korean-style wilted spinach, tsukemono and green tea. I didn’t actually serve this dish with a martini but its constituent parts make good accompaniments.

Here are some peanuts, “pork floss” / Rousong (I didn’t know what it was at first either but it’s tasty) and my own carrot San Bai Zu.

 
Fish floss also exists but it won’t be to everyone’s taste. I thought it tasted like fish food but it goes quite nicely sprinkled over thick tofu slices in miso soup.

  
Otherwise, I prefer to keep it simple. Here are some salted pistachio nuts in their shells.

 
Sun-dried tomatoes and olives stuffed with anchovies.

  
I’ve previously mentioned that martinis go very well with seafood. Here are some locally caught mussels served in a cream and onion sauce in the garden.

  
Here are some scallops and prosciutto.

  

Let’s go back to mystery pork products. There is quite a lot of pork in this entry even though I don’t actually eat a lot of it. These are honey roasted pork pieces. Given the unknown ingredients they could even be kosher/halal, we just don’t know.

 
However, I must admit, they were quite tasty.

  
Here I served the pork with walnuts and olives.

   
It kept us going for at least one round of martinis.

  
Here is some of Mum’s homemade herb butter to be slathered on some tasty rare steaks.

 
I guess it’s less of a snack and more of a meal…

But it certainly went well with a martini.

  
Barbecue and steaks in general go very nicely with or immediately after a martini.

Here is some salmon carpaccio, with lemon juice, grated lemon and orange rind, herbs, capers and juniper berries. I evidently still need to work on my presentation but it tasted nice enough and nobody died.

  
If you prefer your salmon cooked with heat I marinated some in a little rice vinegar for 30 minutes then grilled it for 16 minutes on a high heat.
And I think that’s quite enough for one blog post…

A Spicy Umami Michelada

A London variation on the classic Mexican drink.

  

As I’ve said before, I don’t always drink martinis. I also like beer and lager, to name but a few alternatives. I recently wrote about the Mexican drink Micheladas and here I’ve come up with another variation.

In its most simple terms, a Michelada contains beer/lager, the juice of a lime, a dash of Worcestershire sauce and a salt rim around the glass. Hot sauce, soy sauce and tequila are also frequently added.

I recently bought one or two Laura Santtini ingredients and thought they would make a good addition for this variation on the recipe. You will need:

  

  • A lime
  • A beer
  • Salt (preferably a good quality sea salt)
  • Worcestershire sauce
  • Soy sauce
  • Tabasco sauce

And the following enhancements:

  • Taste 5 Umami paste
  • Taste 5 Umami Rush condiment

I often rub the umami paste into meat, fish and vegetables before cooking them. However, if you don’t have any to hand, use tomato purée as a substitute and add a little more soy sauce.

The condiment is like a salty umami-citrus pepper. You can use normal salt instead but the condiment adds a zesty, umami buzz to the drink.

  • Run a tall glass under a tap and leave it in the freezer for at least 20 minutes (but preferably several hours)
  • Sprinkle salt and the Umami Rush condiment on a plate
  • Remove the glass from the freezer, cut the lime and rub half of it around the rim of the glass

  

  • Rim the glass in the salt and Umami Rush mixture to create a reddish crust
  • Juice the lime and add it to a jug
  • Add a dash of Worcestershire sauce and a dash of soy sauce.
  • Add a few drops of Tabasco sauce (to taste)
  • Add a smudge of Taste 5 Umami paste
  • Add some of the beer and stir the mixture
  • Pour the mixture into the rimmed glass then top up with more beer
  • Add ice and stir gently before serving. Try not to get the salt rim wet during this process.
  • Instead of ice I use lime segments that I store in the freezer (these are good for gin and tonics as well)

It’s perfect for a hot day. It’s also good for a… err… hangover.

The Espresso Martini

Make me something that wakes me up and then f#*€s me up.”  

 I’ve wanted to make this one for a long time but given its chemical stimulant potency I found myself putting it off until a suitable situation arose.

The origin of most cocktails is blurry (a testament to their effectiveness) but it is believed that the espresso martini was created in a bar in London when a model entered the premises and asked the bartender to make her a drink in the manner quoted at the top of this post. Class in a glass? Perhaps not. But the drink has quickly earned its place in the cocktail hall of fame, which is quite a feat considering how relatively young the drink is in comparison to some of its competitors.

  
Very simple, an espresso martini combines coffee liqueur, vodka and fresh espresso, all chilled and served in an appropriate glass.

  

As a liqueur I used Kahlúa. Created in the mountains of Veracruz, on the Caribbean coast of Mexico, the drink combines arabica beans with sugar cane to create a rich, sweet liqueur. There are several other coffee liqueurs out there but this I would say is the standard. The etymology of the word Kahlúa comes from the indigenous Nahuatl language, meaning ‘the house of the Acolhua people’. The Hispanisisation of the word can be found in the name San Juan de Ulùa, known in my family as being the location of a very difficult naval conflict between the Spanish navy and a fleet commanded by one of my ancestors. Symbolic indeed. The magnitude of the maritime battle was matched only by the hangover I experienced upon drinking too many of these drinks. Let that be a lesson to you all.

Kahlúa also contains rum. You might like to add a dash of dark rum to an espresso martini to give it even more of a kick and flavour. I would recommend a darker rum for this.

  
The family favourite is Wood’s Rum – not least because of its naval associations.

For me, the basic trick of the espresso martini is to balance the sweetness of the liqueur with the savoury coffee and neutral-but-strong vodka. Too much liqueur and you overpower the coffee and find yourself with a sickly-sweet drink. Not enough liqueur and the drink becomes overpowering to the palate.

I normally like my martinis stirred and not shaken but with this drink you need to shake it like a Polaroid picture – well enough to produce a healthy froth. I also recommend that you keep the vodka and the martini glass in the freezer so that it’s all nice and cold.

  

There – a nice and frosty martini glass. I’ve seen these served in coupe glasses as well which works nicely too. 

When to drink them

The alcohol-caffeine combination of an espresso martini would not make a good aperitif and certainly wouldn’t be suitable as a night cap. I would therefore recommend it after a meal, but ahead of a late night.

  

The opportunity for me to drink one recently presented itself whilst I took part in our local Highland Games. The day sees traditional pipe band music, dancing and fitness competitions, such as tossing the caber, throwing the hammer, kilt races and other fun pursuits, not to mention a healthy amount of alcohol consumption. What else would you expect when a horde of Hebrideans get together – some travelling from other islands, the mainland and even abroad to catch up with family and friends for the annual event.

Anyway I volunteered to help behind the bar (it’s obviously my spiritual home) during the daytime. After a day of serving booze but not drinking any, followed by a quick meal at home, it was time for me to prepare for the night of festivities ahead. There is usually much drinking and merriment in local pubs, followed by a traditional ceilidh dance in the town hall so I was going to need some stamina, or at the very least, stamina’s distant relatives: booze and caffeine.

  

Using my Mum’s trusty coffee machine I made myself an espresso.

  

Taking a vintage silver-plated cocktail shaker, I added about 4 ice cubes and poured over the coffee. If you don’t have a cocktail shaker you can do this with a large jar. It works almost as well.

  • Add 20ml coffee liqueur (or to taste – more for a sweeter drink, less for a stronger, more bitter punch-in-the-face type imbibement.
  • Add 120ml chilled vodka.

Shake it all up very vigorously. The harder you shake, the thicker the foam (la crema) you will get on top of the drink. A nice, firm foam is more attractive to look at, adds a textural smoothness to the drink and is perfect for a nice garnish or coffee beans.

Pour the drink into the glass. If you used a jar to shake it up, try to hold back the ice cubes.

  
If you don’t have a good foam it will look a bit like this. The texture isn’t so nice and it doesn’t look anywhere near as attractive.

  
It should look thick, rich and creamy on top, with a dark dangerous looking underside. Garnish with some coffee beans.

  

I took them out from the top of mum’s machine. I like to use three pointing out from the middle of the glass, with the seam of the bean facing upwards.
  

And serve!

But be warned, normally there is a two martini rule. For this drink, however, I would recommend that you only have one on a night out. Anymore and you will be drunk and wide awake until dawn. Although perhaps that’s your goal. In which case go right ahead, but you have been warned!

  

The Lorena-san Michelada

This is my Japanese variation of a classic Mexican drink – the Michelada. I have named my version after my friend from Mexico City who introduced me to the concept. It’s not a martini but hey – I can’t drink martinis ALL the time! Plus, summer is coming and this is a great summer drink.

It’s very similar to a standard Mexican Michelada, which is essentially beer, lime juice and some additional savoury and/or spicy sauces served in a salt-rimmed glass. The drink is comparable to a Bloody Mary and very good for a hangover or alcoholic rehydration on a hot day. However, the mixture for the glass rim in my version is heavily influenced by Japanese ingredients. If you can’t get hold of them, I recommend you try a more standard recipe with beer, Worcestershire sauce, lime and salt at the very least, so you can experience this wonderful drink. The ingredient combination might sound unusual, alien and even unpalatable to some of you but trust me, I’ve had lots of experience.

You might ask me why I would combine a Mexican recipe with a Japanese tang. Well, it’s mainly because I tried this and it worked. Otherwise though, Japan and Mexico have more in common than might meet the eye. Obviously both countries feature heavily in the Kill Bill franchise. Both countries also have extensive experience of earthquakes. If there’s ever a rumble and a shake of the earth your Mexican and Japanese friends will be the first to jump under a table – fact! However, most importantly for the sake of this blog, the cultures of both countries hold flavours and cuisine in extremely high regard.

Both Japan and Mexico are blessed with climatic diversity, which in turn has led to very distinct regional variations in things like agricultural produce and other forms of naturally available food. This in turn has led to the evolution of a rich assortment of cuisine specialities.

In the case of Mexico I think that the highly sophisticated cuisines do not receive enough international acclaim. I love Japanese food and I am very glad that it has received a lot of global recognition, evidenced not least by the multitude of Michelin stars awarded to Tokyo.

Mexican cuisine however, does not seem to have had the same international recognition. It appears to have been hijacked by numerous profit-making rip-off versions, selling a business model rather than genuine Mexican food. Of course, there are exceptions, particularly in the United States (and there are a handful in London) but it is far easier to find an authentic Japanese restaurant than it is to find an authentic Mexican one. I hope that in the future Mexican cuisine will be given the acclaim it deserves.

But I digress… here is my recipe.

Run a tall beer glass under a tap and place it in the freezer for at least 20 minutes (preferably longer).

  
Grind a pinch of sea salt, a pinch of furikake (a salty-umami Japanese seasoning), a pinch of caster sugar, a pinch of chilli powder and a pinch of sesame seeds with a pestle and mortar. 

Slice a lime or yuzu fruit. Rub one half over the rim of the glass. 

 
Rim the glass with the ground mixture. Save any leftover mixture for later. You will need the lime/yuzu as well.

Add the following to the glass:

The juice of 2 limes or yuzu fruit

A dash of hot sauce (I used Sriracha)

A dash of soy sauce

A dash of Worcestireshire sauce

And last but not least… A light beer!

You can add an ice cube or two to cool it down, or even better, use frozen lime or lemon slices.

 

Serve with the leftover salt/chilli/sesame/furikake mixture in a side dish. Lick your finger and dab it in to taste, as you would with some salt with a tequila.

Serve with a wedge or two of lime/yuzu as well.

And it will go with a wide range of izakaya-style snacks too.

The Peruvian Tiger’s Milk Martini (con Leche de Tigre)

I was once accused of being “an evil agent” working for the Chilean government to sabotage the reputation of Peru…  a little unforeseen side effect of my unusual career in the murky world of intelligence. Nonetheless, despite the attempted slander I am a firm fan of Peruvian cuisine and drinking culture. I love Pisco and prefer a Pisco Sour over most other cocktails.

Seafood plays a big role in some of the more distinctive dishes originating in Peru. Acclaimed Japanese chef Nobu Matsuhisa seems to use a lot of Peruvian-inspired recipes and I’ve had one or two delightful dishes in some of the Latin American restaurants in south London. So I decided to have a go myself. I made a very simple ceviche using a fresh salmon fillet, cut into pieces and left submerged in a tub containing the juice of three lemons, a chopped onion, a handful of chopped coriander, a chopped chilli and a dash of Sriracha sauce for five hours. I was slightly nervous about it, imagining that I would create some sort of monstrous fish-stinking disaster. However, when I served the fish it smelt fresh and zesty with a lovely silken texture like sashimi. Obviously you don’t need to cook the fish so it’s pretty easy after you’ve assembled everything.



Anyway I’m rambling. Here it is, served with the marinade in a shot glass. This is known as Leche de Tigre (Tiger’s milk) and is drunk as a shot. Apparently it’s an aphrodisiac; I found it refreshing and spicy.

So obviously I turned it into a martini. I couldn’t find anyone online who had done this before so here is my recipe:

1 measure of vermouth

1 measure of Leche de Tigre

4 measures of gin or vodka

Pour and stir. I served it without a garnish. It went down very well: I like a spicy martini but this one also had a really heady citrus kick to it as well. I really wasn’t sure whether or not any of this would work, the ceviche or the martini but I’m pleased to report that it was both very easy and tasty!

So, dear Peru, I’m not an evil agent of the Chilean government trying to bring you down. I’m very fond of your cuisine. Salud!

A martini using gin infused with coriander/cilantro



I have previously mentioned that Coriander (cilantro) is the Marmite of the herb world (you either love it or hate it). I have also previously mentioned that I love it. So I infused some gin with it.

Coriander is already one of the flavours infused into many gin varieties, although juniper is (or should be) the dominant flavour. Being a traditionalist I would normally want to preserve the juniper flavour as the key ingredient but I was curious to try out something new and wanted to satisfy my own love for the coriander flavour. It has a fresh, grassy, almost citrusy taste and pairs well with lemon and lime. Critics often describe the flavour as soapy, so be careful who you serve this to. Otherwise I think it’s delicious.

To infuse the gin take a handful of coriander leaf per 100ml gin you want to infuse. Wash it, pat it dry then coarsely chop it.

Add it to a clean jar, top up with gin, seal the lid, give it a vigorous shake, then leave it for around two days. Shake it once or twice each day.

The gin should turn a nice green hue.

Strain it and discard the coriander leaves.

Then decant it into a glass container or two and keep in the fridge to store, and freezer if you want to use it in a martini.

When you’re ready to serve, pour the drink as a normal martini but with coriander gin instead of normal gin. Garnish with some coriander if you have any to hand (or a piece of lemon peel which compliments the zesty coriander flavour) and serve with some nibbles.

When I was testing out the coriander gin first I felt a craving for avocado so I decided to make some very simple guacamole.

I mashed 2 avocados with a square inch of onion, chopped, a handful of chopped fresh coriander, a squeeze of tomato purée, a sprinkling of chilli flakes and a squeeze of lemon or lime (whatever you have to hand) and served it with tortilla chips. This is a very basic guacamole recipe I just threw together with what I had to hand (it was a Friday night and I was exhausted). There are almost bound to be better recipes out there. My cousin in Scotland makes a good one!

The coriander martini also goes well with peanuts.



And seafood.

Here I served a plate of pre-cooked prawns with tiny drizzles of honey, sesame oil, lemon juice, mirin and rice wine vinegar, with further tiny sprinkles of grated lemon zest, chilli flakes and chopped coriander. I wanted to compliment the delicate prawns not anhialate them with a bazooka of sharp flavours.

All in all, I liked the coriander martini more than I was expecting. I also found that it went very well with certain nibbles. I would recommend it for dinner parties but you’ve got to be careful because some of your guests might be of the “I hate coriander” persuasion. 

The Argentini (the Chimichurri Martini)

Chimichurri is an Argentine sauce made from parsley, garlic, olive oil, oregano and vinegar. You can make an unusual aperitif by muddling a teaspoon into your vermouth before you pour a classic martini, to whet your appetite before a meal – especially if it’s a Latin American dish; a juicy steak for example. It will work particularly well if the dish you are serving for dinner has been marinaded in the Chimichurri as well.

I prefer variations of Chimichurri from other parts of Latin America that use a lot of coriander (cilantro) but the Argentine version is probably the one with the greatest appeal. My favourite Latin American sauce is green Colombian Ají, which would work very well for martini lovers who also have a penchant for hot spiciness and coriander flavour.

However, coriander/cilantro is the Marmite of the herb world: you either love it or hate it. For example, I love it; my mum hates it. I find it a fresh, clean, grassy flavour but people often complain that it tastes soapy or like washing up liquid. There doesn’t seem to be any middle ground.

If you’re not a fan, stick to the Argentine version of the sauce. Otherwise try this out with Colombian Ají – and preferably home made rather than the bottle I’ve used here.

To prepare, muddle one teaspoon of Chimichurri sauce in a measure of vermouth (to taste, depending on how sweet or dry you like a martini). Top up with gin or vodka, then serve.

It turns a milky-white colour like Pernod or Ouzo.

As an accompanying meal I slathered more of the Chimichurri over some rainbow trout fillets and left them to marinate for half an hour while I poured – and drank – the drink.

I then rolled them up, held them together with bamboo skewers and grilled them for around 15 minutes.

I served it with salad and a yoghurt/Chimichurri sauce, drizzled with oil, a little balsamic vinegar and some dried oregano. It probably isn’t the most appetising meal you’ve ever seen, but that’s why I’m a martini-maker not a chef.
